In addition to the caramelized and Pale Ale malts used, white candy and 100% Belgian hops from "Pops", Hilleveld obtains its taste through the complex fermentation process. The beer undergoes a first short high fermentation and then a second slow "Wild" fermentation with the famous Brettanomyces yeast. In addition to the complex flavor profile, Goldings hops of Popering origin are added at the end of the fermentation to enhance the Hilleveld aroma. The beer is only allowed to leave the brewery after a brewing process and maturation of 3 months.
During the further storage of the beer, the "Brett" yeast will ensure a true taste evolution.
