Aroma brings out a wonderful barnyard funk, moderate cognac, leather and some citrus skins. Flavour is wonderfully funky, with signature Tilquin barnyard funk, gentle cognac barrels, and gentle leather. The cognac is fairly subtle, mostly accentuating the wonderful barnyard funk.
In this special blend, we used 40% 2 years old lambics that fermented and matured for 2 years in freshly emptied Cognac barrels. 30% 1 year old lambics and 30% 3 years old lambics were used in the blend to bring freshness and complexity, respectively.
