Aging in bourbon barrels(Willet Pot Still Reserve) gives the classic Chimay Blue an extra dimension: You taste the familiar notes of dark fruit (raisins, figs) and a malty sweetness of caramel.
The Bourbon Influence: The barrels add distinct layers of vanilla, toasted oak, and coconut. Mouthfeel: It is a full-bodied and oily beer. Despite the 10.5% alcohol, the sensation is warming but beautifully blended with the sweet accents.
Aftertaste: The finish is long and evolving; The sweetness of the fruit gives way to a light, woody bitterness. A light touch of smoke and tannins (from the wood) lingers on the palate. It finishes drier than the regular Blauw, which invites you to take another sip.
