Smell slowly evolves as the beer warms, lightly sour, citrus with a hint of wood and puke. Very subtle. Apple, cider, cherries. Sourwood, cheese, minerals. Taste is sour astringent, with a good fizz and a long, full, vinous finish. Very complex, the astringency has different dimensions, finishing in tongue tingling grapefruit/lemon peel. An amazing experience.
